Home-cured Gravlax Gravlax is a Nordic dish of salmon cured in a mix of sugar and salt, seasoned with dill, juniper berries and black pepper. Gravlax is usually served as an appetizer, breakfast, or with a salad; sliced thinly and accompanied by a dill and mustard sauce, cream cheese or sour cream, either on crackers, rye bread, bagels, or with boiled potatoes. Traditional hovmästarsås (Maître d’s sauce) is included with the Gravlax.

In this home-cured version, following a time-tested recipe, salmon is turned into gold by the action of the dry curing brine. Two pounds of salmon filet are cured yielding approximately one and one-half pounds of gravlax, enough for a large crowd. The gravlax will last for a week to ten days from delivery, which will be made by arrangement with at least one week’s notice. Ideal for New Year’s Day breakfast.

Kayaking Sedge Island Wildlife Area in Island Beach State Park See what might be the most beautifully pristine spot at the shore in New Jersey from the water level. Sedge Island Wildlife Area is home to all sorts of marine and avian life, from fish, crabs and other shellfish; to birds of many varieties, including gulls, terns, egrets and other waders, cormorants, and even breeding ospreys, and an occasional pelican -- in New Jersey!

Bring sunscreen, sunglasses, a hat, and a thirst for exploration to experience a half-day paddling in and about this protected refuge. Kayaks, paddles, and flotation vests are all provided as are paddling instructions, for anyone new to kayaking. Date and time to be arranged; Summer 2020.

We will leave Beacon at 11 a.m. (after the first service) and drive to Boxwood Hall on East Jersey Street. Local Hiking Experience Ted Brewer will guide you on a hike first to the top of the Tourne, a singular glacially-formed forested pinnacle on the Mountain Lakes - Boonton border and then along nearby Rockaway River in Grace Lord Park to view scenic rapids and Boonton Falls where the river cascades down through a deep gorge. We will also see a short remnant of the historic Morris Canal. The trail up the Tourne is steep in places but is a well-maintained gravel road with many places to stop and rest. The summit provides a panoramic view of the region. The outing will last from two to three hours, including a very short drive between the Tourne and Grace Lord Park. There are fascinating remnants of the raceway system built to divert water to mills and factories, plus historic structures reflecting Paterson's industrial heritage. You'll see the Great Falls, one of New Jersey’s premier natural wonders and the heart of a rapidly-improving national park. Ted Brewer will lead you on a walking tour of these sites. He will also take you through the Paterson Museum in the mill district, where you'll view goods, machines and artifacts made in the city, from a Wright Whirlwind radial aircraft engine, of the type that powered Lucky Lindy's solo Atlantic flight, to a primitive iron submarine. Storied Hinchliffe Stadium near the Great Falls may also be visited. Ted will cover the museum admission charge. Celebrate Juneteenth with a Low Country Boil! Join The Cripe Family in Maplewood as they celebrate Juneteenth with a Low Country boil in honor of Jamaine's South Carolina heritage. A Low Country Boil is a regional, one-pot dish that traditionally includes catch-of-the-day shellfish, vegetables, slices of spicy sausage (like andouille or kielbasa) and an array of spices. Chaat is a term encompassing a variety of Indian street foods which usually combine salty, spicy, sweet, and sour flavors. Chaat dishes are usually small, consumed on their own as a snack. Regina and Ken Carlson, who have been going and living there forever will help you plan your trip, take you to the Oxford University Unitarian chapel service, and treat you to a day of chauffeured sightseeing.

You’ll be their guests in Greenway House, their large (home exchange) house down a private drive, with a conservatory that extends into a walled garden. They’ll serve you a full English breakfast at least once during your stay, and serve or help you prepare other meals, drinks in the garden, picnics -- providing a comfortable and flexible home base.
