| Home-cured Gravlax |
Gravlax is a Nordic dish of salmon cured in a mix of sugar and salt, seasoned with dill, juniper berries and black pepper. Gravlax is usually served as an appetizer, breakfast, or with a salad; sliced thinly and accompanied by a dill and mustard sauce, cream cheese or sour cream, either on crackers, rye bread, bagels, or with boiled potatoes. Traditional hovmästarsås (Maître d’s sauce) is included with the Gravlax. In this home-cured version, following a time-tested recipe, salmon is turned into gold by the action of the dry curing brine. Two pounds of salmon filet are cured yielding approximately one and one-half pounds of gravlax, enough for a large crowd. The gravlax will last for a week to ten days from delivery, which will be made by arrangement with at least one week’s notice.
